The latest edition of was recently published by the University of Hawaiʻi at 惭ā苍辞补’蝉 Food Science and Human Nutrition Program, and UH 惭ā苍辞补’s as an (OER) textbook.

The original textbook serves as an introduction to nutrition for undergraduate students and covers basic concepts in human nutrition, key information about essential nutrients, basic nutritional assessment and nutrition across the lifespan.

The 2020 edition adds an interactive layer, with 176 embedded learning activities, more than 100 flashcards at the end of sections to help students review important terms and more than 50 drag-and-drop activities to reinforce the learning objectives. These activities are designed to add engagement with the content, and support student learning through formative practice and immediate feedback. The book also provides an instructor-focused website with additional resources.

Associate Professor Marie Kainoa Fialkowski Revilla of CTAHR’蝉 , and Kellie Taguchi of the Office of Academic and Student Affairs, worked on the project.

“Our efforts on this project truly demonstrate the value of working together or hoʻokahi ka ʻilau like ana,” said Revilla.

“The Human Nutrition textbook is one of our most successful projects,” added William Chismar, 东精影业 惭ā苍辞补 Outreach College dean. “In addition to being used around Hawaiʻi, the textbook is being adopted at schools across the U.S., providing great recognition to CTAHR and 东精影业 惭ā苍辞补.”

The project has eliminated textbook costs for more than 2,000 students who have taken the course at 东精影业 惭ā苍辞补.
