He had been visualizing a dessert of ice cream (made of rice), topped with balls of mango formed using the spherification technique.<\/p>\n<p>Dunn said, &ldquo;In the long, long, long-term, I would have my own pizza place or just bakery in general, just so I could test some weird ideas and concepts. Which is, by the way, part of the reason I like this class.&rdquo;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-cip-wierd-food-dunn-dessert-300x169.jpg\" alt=\"dessert\" width=\"300\" height=\"169\" class=\"alignright size-medium wp-image-144803\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-cip-wierd-food-dunn-dessert-300x169.jpg 300w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-cip-wierd-food-dunn-dessert-130x73.jpg 130w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2021\/07\/kapiolani-cip-wierd-food-dunn-dessert.jpg 676w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>And that\u2019s exactly the attitude Tamamoto wants from her students.<\/p>\n<p>&ldquo;I want them to have that desire to question, and to know and to experiment, and I want them to also know the science behind what they\u2019re doing,&rdquo; she said. &ldquo;I want them to be able to troubleshoot when they are out in the industry. I want them to be thinkers.&rdquo;<\/p>\n<p>&ldquo;Food Science and Modernist Cuisine&rdquo; is one of the 300-level courses required for an advanced professional certificate.
