The hope is these recipes and the short stories that accompany them will give everyone some recipe ideas for the holidays.<\/em><\/p>\n<figure id=\"attachment_169847\" aria-describedby=\"caption-attachment-169847\" style=\"width: 214px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/maui-culiary-shurilla-t-214x300.jpg\" alt=\"Shurilla in U M Maui kitchen\" width=\"214\" height=\"300\" class=\"size-medium wp-image-169847\" srcset=\"https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/maui-culiary-shurilla-t-214x300.jpg 214w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/maui-culiary-shurilla-t-93x130.jpg 93w, https:\/\/www.hawaii.edu\/news\/wp-content\/uploads\/2022\/12\/maui-culiary-shurilla-t.jpg 250w\" sizes=\"auto, (max-width: 214px) 100vw, 214px\" \/><figcaption id=\"caption-attachment-169847\" class=\"wp-caption-text\">Teresa Shurilla<\/figcaption><\/figure>\n<p>Pastry chef <strong>Teresa Shurilla<\/strong>, who retired in August 2022 after 20 years with <abbr>东精影业<\/abbr> Maui College\u2019s <a href=\"https:\/\/maui.hawaii.edu\/programs\/culn\/\">Culinary Arts Program<\/a>, shared her recipe for Grandma Bogue\u2019s apple pie.<\/p>\n<p>&ldquo;My Grandma Bogue was a great baker,&rdquo; Shurilla said. &ldquo;She was quite fond of me growing up and I was fond of all her baked goods\u2014homemade custards, rice pudding, applesauce cake, plum pudding&#8211;but mostly, her apple pie. I used to watch and help her in the kitchen. We would roll pie dough together and I got to eat the leftover scraps baked with cinnamon sugar. As she aged, the times I spent with her meant so much to me. I loved the fact that she told me it was ok to eat lemon meringue pie\u2014with the highest sugar content of ANY pie!&#8211;because there was fruit in it. She shaped my future and my taste buds at a young age. Her love and influence are two of the reasons I chose baking as a profession.&rdquo;<\/p>\n<p>Shurilla said the only alteration she made to her grandmother\u2019s recipe was to substitute vegetable shortening for lard.<\/p>\n<p><span class=\"blocklink\"><a href=\"https:\/\/www.hawaii.edu\/news\/tag\/uh-holiday-recipes\/\">See more <abbr>东精影业<\/abbr>-mazing holiday recipes<\/a><\/span><\/p>\n<p>&ldquo;I taught Grandma Bogue\u2019s Apple Pie to all the beginning students in our baking program since I started working at the University of <span aria-label=\"Hawaii\">Hawai&#699;i<\/span> Maui College in 2002,&rdquo; she said. &ldquo;The tradition continues with new baking instructors, always explaining it was my grandma\u2019s recipe along with the little story I always tell. I can only imagine how many Maui families have served\u2014and still serve!\u2014this apple pie at their holiday dinners. We sell many dozens of them at our annual holiday pie sale. And all my former students tell me they bake either the original or their own versions for their families.&rdquo;<\/p>\n<p><strong>Flaky pie dough with butter and shortening<\/strong><\/p>\n<p>Yield: Enough for 2, 9\u201d, double-crust pies<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 1\/4 cups pastry flour<\/li>\n<li>1 1\/2 teaspoon salt<\/li>\n<li>10 oz. unsalted butter, cold<\/li>\n<li>6 Tablespoons vegetable shortening, cold<\/li>\n<li>3 1\/2 oz. ice water<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Mix the dry ingredients together. Cut in the butter and the shortening until the shortening resembles the size of peas. Add the water a little bit at a time just until the dough comes together. You may not need all the water. Divide dough into four equal pieces. Flatten into disks. Cover tightly with plastic wrap and refrigerate for at least a couple of hours before rolling it out.<\/p>\n<p><strong>Filling ingredients:<\/strong><\/p>\n<ul>\n<li>5 large apples\u2014any kind you like as long as they are firm\u2014peeled, cored and sliced thin<\/li>\n<li>2 cups granulated sugar<\/li>\n<li>1\/2 cup all-purpose flour<\/li>\n<li>1 Tablespoon ground cinnamon<\/li>\n<li>1 teaspoon powdered ginger<\/li>\n<li>1\/2 teaspoon ground cloves<\/li>\n<li>butter, for dotting the crust<\/li>\n<li>coarse white sugar, for sprinkling<\/li>\n<\/ul>\n<p><strong>To make the pie:<\/strong><\/p>\n<p>Preheat the oven to 350F.<\/p>\n<ul>\n<li>Roll out two of the dough disks into circles, at least 10&rdquo; in diameter. Place one into a 9&rdquo; pie pan.<\/li>\n<li>Mix the sliced apples with the remaining ingredients and pour into the unbaked shell.<\/li>\n<li>Dot with butter and cover with top crust. Crimp the edges.
