The holiday season is here, and 东精影业<\/abbr> News is asking members of the University of Hawaiʻi<\/span> ʻohana to share their favorite recipes<\/a>. The hope is these recipes and the short stories that accompany them will give everyone some ideas for eats throughout the holidays along with some good feelings of the season.<\/em><\/p>\n

东精影业<\/abbr> M\u0101noa College of Education EdD<\/abbr> candidate Charlie Clausner shared his family’s corn casserole recipe, which was modified from a recipe his mom found in a cookbook.<\/p>\n

“I grew up in the cornfields of central Illinois,” Clausner said. “It\u2019s a great Thanksgiving day dish and always delights. Give it a try!”<\/p>\n

According to Clausner, after he made it for friends in Hawaiʻi<\/span>, they started to ask for it by name.<\/p>\n

He said, “The recipe got circulated through some friends, and they called it the ‘Charlie Casserole.’”<\/p>\n

Charlie Casserole<\/h2>\n

(makes 10–12 servings)<\/p>\n

Ingredients<\/strong><\/p>\n

    \n
  • 1 (16 oz.) can whole kernel corn, drained<\/li>\n
  • 1 (16 oz.) can cream style corn<\/li>\n
  • 2 eggs, slightly beaten<\/li>\n
  • ½ tsp. salt<\/li>\n
  • 1 c. butter, melted<\/li>\n
  • 1 c. sour cream<\/li>\n
  • 1 (8 ½ oz.) box corn muffin mix<\/li>\n
  • 1–2 c. grated Cheddar cheese (optional)<\/li>\n<\/ul>\n

    Instructions<\/strong><\/p>\n

    • Mix together all ingredients except cheese.<\/li>\n
    • Add 1 cup Cheddar cheese if desired.<\/li>\n
    • Pour into greased 9 x<\/abbr> 13 inch pan.<\/li>\n
    • Bake at 350 degrees F<\/abbr> for 40 minutes or until set.<\/li>\n
    • If more cheese is desired, add additional ½ to 1 cup Cheddar cheese on top of casserole when set.<\/li>\n
